ESTERASE ISOZYMES ANALYSIS IN FRUITING BODY OF AGARICUS BISPORUS

Fruit body esterase isozymes from extract of Agaricus bisporus was investigated following the method of polyacrylamide slab gel electrophoresis. The isozyme spectrum of esterase in the pileus, stipe and lamella tested appeared to have less variation. The isozyme spectrums of esterase were same when the pileus was 2 to 4cm in dimeter. lsozyme spectrum of esterase in cultivated strain of Agaricus bisporus appeared to have many types, indicating a wide variation. The variation seemed in relation to yield, quality and colour etc.
