Headspace Solid Phase Microextraction for the Analysis of Volatiles in Xuanwei Ham

The application of solid phase micro extraction (SPME) combined with gas chromatography/mass spectrometry (GC/MS) for the analysis of Xuanwei ham volatile compounds was studied. The results showed that either temperatures or times of extraction influenced the total number of volatile compounds extracted. The optimal condition was found at 60℃and 60*#min. Seventy two components were isolated and identified by GC/MS, including alkanes, aldehydes, alcohols, acids, esters, ketones, cyclo compounds and phenols.
