Study on Enzymatic Hydrolysis of Auricularia auricular

Auricularia auricular polysaccharides was extracted from pretreated Auricularia auricular by enzymatic hydrolysis. The optimum enzymatic hydrolytic conditions were also determined. The optimum hydrolytic conditions of pectinex were determined as follows enzyme 1.1%, pH 5.0, buffer to raw material ratio 50, temperdure 55℃, and reaction time 80min. Under these conditions, the polysaccharides extraction rate was 4.15%. The optimum hydrolytic conditions of celluase were also investigated and identified enzyme 1.3%, pH 5.0, buffer to raw material ratio 50, temperature 50℃, reaction time 80 min. Under these conditions, the polysaccharides extraction rate was 4.71%.
