Comparative Analysis of Nutritional Composition of Wine Mud and Musalais Precipitate

The major nutrients of wine mud and Musalais precipitate such as the moisture, ash, protein, total acid, volatile acid, total sugar, reducing sugar and the functional ingredients such as the flavonoids, resveratrol and mineral elements were analyzed by the national standard and literature methods. The results showed that the wine mud and Musalais precipitate contained abundant nutrients, total acid content 2.37~5.3 g/L, volatile acid 0.62~1.04 g/L, total sugar 15.48~32.9 mg/g, reducing sugar 8.55~13.83 mg/g, flavonoids 226.80~489.65 μg/g, resveratrol 28.63~80.48 μg/g, protein not detected. In addition, they have many kinds of minerals such as potassium, iron, copper, zinc, manganese, chromium, and selenium, lead, and arsenic were not checked out in lees. These resources have the great potentiality of development and utilization.
