Optimization of extraction conditions of gypenosides by enzymatic method

Extracting gypenosides by enzymatic method was studied by single factor test and orthogonal test.It was concluded that the optimal conditions of extraction were the ratio of solid and liquid 1:14,pH 4.5,the enzyme dosage 0.4%,the enzymolysis temperature 45℃,and the enzymolysis time 120min.Under these conditions,the yield of gypenosides was 4.60%,which increased 17.05% compared with the hot water extraction.The test provided a basis for extracting gypenosides by enzymatic method.
