Study on antioxidation capability of fructose-oligosaccharide and 5-hydroxymethylfurfural

Object:The experiment was conducted to study on the antioxidation capability of W-FOS (Microwave-assisted synthesis of fructose-oligosaccharide) and 5-HMF (5-hydroxymethylfurfural) which was produced in the synthesis process. Method:The clearance capability to DPPH,ABTS+ of W-FOS and 5-HMF was determined. 50 male KM mice were randomly divided into 6 groups:control group,high-fat diet group (HFD,20% fat w/w),HFD+0.5% E-FOS (Fructose-oligosaccharides by enzymatic synthesis ) group,HFD+0.5% W-FOS+5-HMF group (5-HMF content were 0.2%,0.02%,0.0% w/w). After 5weeks,the antioxidation capability was measured. Results:W-FOS had clearance capability to DPPH and ABTS+,and 5-HMF could enhance the capability. E-FOS、E-FOS,W-FOS+HMF group could significantly reduce the blood lipid of high serum lipid (HSL)mice (p0.05). Adding W-FOS with middle and low level 5-HMF could recover the plasma T-AOC,CAT,MDA,ROS of HSL mice significantly,while W-FOS with high level 5-HMF had significant effect on plasma CAT and ROS. The protective effect of W-FOS with middle level 5-HMF on HSL mice liver’s antioxidation capability was superior to the effect of W-FOS with high level 5-HMF. Conclusion:Both W-FOS and 5-HMF had clearance capability to DPPH and ABTS+. 0.5%W-FOS with 0.00%~0.02% 5-HMF had protective effect on blood lipid,plasma and liver antioxidation capability of HSL mice.
