果蔬成熟衰老中的活性氧代谢

Reactive oxygen species plays an important role by the process of the ripeness and senescence of fruit and vegetable. The burst out of reactive oxygen may activate the process of senescence. The property, production and defense system of free radical were introduced in this paper. The relationship between free radical and ethylene was mentioned as well.
