Study on Determination of Content of Phenol in Kiwifruit by Folin Method

Using gallic acid as the standard, the optimized conditions for determining content of kiwifruit phenol by Folin method are as follows: volume ratio between Folin reagent and 10% Na2CO3 1:2 (V/V), volume of Folin 4 ml, reaction temperature 25 ℃,and reaction time 120 min. There is a good linearity between content of phenol and absorbance in the range of 1~6μg/ml. The average recovery rate of spiked phenol is 98.8%, and the RSD is 0.81%.
