The water extraction conditions of polysaccharides from Chinese pine pollen were optimized by single factor test and orthogonal design. Results showed that extraction temperature and extraction time are the major factors affecting the polysaccharides extraction rate. The optimal extractions conditions are as follows:extraction temperature 90 ℃,extraction time 3 h and ratio of material to water 1:25. In addition, the antioxidant activity of the Chinese pine pollen polysaccharides was evaluated by(·OH) free scavenging assay. Results indicated that the polysaccharides show strong hydroxyl radicals scavenging activity and the 50% effective concentration(EC50) is 0.75 mg/ml.
