THE COMPONENT AND FUNCTIONALITY OF YACON

Yacon (Smallanthus Sonchifolius) is a native Andean plant, cultivated for its tubers throughout South America. Recently it is arousing the attention of many countries in the world for its special functionality. The component and functionality of the yacon tubers and leaves were reviewed in the paper. There are 45~65% (dry material)fructo-oligosaccharides in the fresh yacon tuber, with lower caloric value in human diets and higher bifidogenic effect. High content of phenolic compounds in yacon leaf extracts with antioxidant activity and benefits on diabetes was observed.
