Study on the Technology of Alkali Modification of Insoluble Dietary Fiber of Corn Bran

The optimum conditions for alkali modification of insoluble dietary fiber of corn bran were studied.Four factors including pH,temperature,time,and solid-liquid ratio based were investigated.After orthogonal experiments based on the single-factor test,the optimum conditions for alkali modification of insoluble dietary fiber of corn bran were obtained as follows: pH 10,temperature 90 ℃,alkali modification time 2.5 h and the solid-liquid ratio 1∶50.
