Study on the extraction and stability of Rostellularia Procumbens Ness pigment

Through test of even design and analysis, the article ascertain the condition of extracting the natural pigment from Rostellularia Procumbens Ness. The results show that the primary factor which affect the yield of pigment from Rostellularia Procumbens Ness is temperature, the secondary factors are solvent and time of extraction. Meanwhile article studied the physical and chemical quality of the pigment of Rostellularia Procumbens Ness. The results show that the pigment is affected notably by pH value. In addition the pigment dissolve in water, ethyl alcohol and methyl alcohol, not dissolve in three chlorine methane and ethyl isobutyl acetate. The effecting factors to stability of pigment are researched including the existing substances in the food, metal anions.
