Determination of free sucrose in sucrose esters of fatty acid by polarimetry

A method for determination of free sucrose in sucrose esters of fatty acid by polarimetry was developed. The results indicated that the linear concentration range for sucrose was 0.001~0.05 g/mL with a correlation coefficient of 0.99999. This method has characteristics of precision, and stability. Comparing with the method of national standard, it was sample, quickly and easy to operation.
