The ultrasonic extraction process of water-soluble proteins from fermented catharsius powders was optimized by orthogonal test using the extraction quantity of water-soluble proteins as the index. The optimum extraction process of water-soluble proteins from fermented catharsius powders was determined as follows:the solid-liquid ratio 1:70(g:mL),pH=10 and the ultrasonic time 70 min.The study of analytical methodology has proved that the optimal extraction process is stable and feasible and is valuable in practice.
