Exploration of Tobacco Flavor Analysis and Formulation Based on GC-MS and Chemometrics

In this paper,chemical composition of complex flavor formula was analyzed by means of GC-MS and the computer-aided flavor-adjusting software based on chemometrics,then the flavor formula was further refined under the experience of flavorist.The simulated flavor was evaluated by the chemical composition and odor characteristics.The results showed that the similarity of chromatographic fingerprint between the original and simulated flavors is up to 97.8%.After the evaluation by a professional team formed by flavorist,the smell characteristics of the simulated is very similar to that of the original flavor.Therefore,a potential method based on applied instrument analysis,chemometrics methods and expert knowledge of flavorist was proposed for flavor analysis.
