STUDY ON THE PRODUCTION ANE THE APPLICATION OF SWEET POTATO β-AMYLASES

Jiang Gaosong, Zhang Shenghua (Huazhong Agricultural University Wuhan 430070)  
While the production and the quality of sweet potato starches weren't affected, high activity, long-term stability, safety and without toxicity sweet potato β-amylases could be made from the sweet potato. Sweet potato β-amylases being used, high quality maltose syrups on the composition, the flavour and the colour could be produced.
