Syntheses and Characterization of Carboxymethyl Agar

The carboxymethyl agar(CMA)was prepared with agar and chloroacetic acid and its characterization was analyzed in this essay.The results showed that compared with the original agar,the dissolving temperature,gelling temperature,gel melting temperature,gel strength,hardness,fragility,adhesiveness,gumminess and chewiness of CMA tend to go down with the increase in carboxymethyl;however,the springiness and cohesiveness of CMA tend to go up.The original agar and CMA aqueous solutions all exhibited shear thinning characteristics and pseudoplastic fluid.Both the original agar gel and the CMA gel of skeleton structures were found to be porous network textures,and the skeleton structures of CMA are more compact than those of original agar.
