Study on Extracting Methods of Lecithin in Egg Yolk

Solvent extraction was used to obtain egg yolk lecithin,and the content of phosphorus was determined by phosphorus method,then the content was as the evaluation criteria for the quality control of production.The effects of the concentration of ethanol,the times of extraction,extraction temperature and the metal precipitator on the experimental results were studied,and the optimum conditions of extraction were as follows:95% ethanol,4 times,25℃ and ZnCl2 as metal precipitator.
