THE NUTRITIONAL COMPOSITION OF GRAIN AMARANTH AND ITS POTENTIAL OF UTILIZATION

The nutritional composition in seed,leaf and stem portions of fou-rteen varieties of grain amaranth(10 from USA,4 from China)wereanalysed.The results show that the seed is rich in protein,lysine andfat,their contents are remarkably higher than those of common cerealgrains,especially lysine content is twice that of wheat and three timesthat of millet.The leucine content is lower in grain amaranth,but ismore much in cereal grains.When mixing these two grains the nutriti-onal value of the mixture can be improved.So the seed of grain amar-anth can be used as a nutritional additive of food.There is a lot ofprotein and lysine in leaf and stem of grain amaranth,their contentsalmost as high as those in alfalfa which is well known as a high qualityforage.So the grain amaranth can also be planted as a forage cropwhen utilizing its foliage and branch,but not the grain.In addition,the propagation coefficient of grain amaranth is very high(3000)andsowing norm only 750g/ha,this is of importance for saving foodstuff.
