The result indicated that the chalkiness emerged easily and the percentage of chalkiness was a main factor affecting milling quality of rice in the Northeast of China. There was a significant negative correlation between the percentage of chalkiness, or degree of chalkiness, and the active accumulated temperature. Increase of rice chalkiness was usually connected with emerge of low temperature and freeze harming. In normal years, low chalkiness rice could be produced. But in abnormal years, the chalkiness of rice could increase because of low temperature. According to the result, the technology to reduce the chalkiness of rice was suggested.
