Nitrate and nitrite pollution in vegetables from markets of Dali

Objective To detect and analyze the nitrate and nitrite content in vegetables sold in Dali city,and to provide a scientific basis for the edible safety of vegetables. Methods 20 kinds of vegetables of eight categories from 3 big markets in Dali city were determined by the food safety monitoring device,and the results were analyzed. Results The order of nitrite content in the vegetables of eight categories was: leaf vegetables root vegetables flower vegetables solanaceous vegetables stem vegetables cucurbit vegetables beans vegetables allium vegetables. It had no statistical significance( P 0. 05)about nitrite content between leaf vegetables and root vegetables,flower and stem vegetables through the analysis of variance,but it had statistical significance in other kinds of vegetables( P 0. 05). It had an extremely significant difference with the onion garlic( P = 0. 002) and cucurbit vegetables( P = 0. 007). The mild,moderate,severe and serious pollution rate of nitrate in vegetables were 75%,7. 5%,8. 75% and 7. 5% respectively. Conclusion The nitrate and nitrate pollution in vegetables from Dali city is relatively serious. The content of leafy vegetables is the highest. The pollution of different vegetable market is different. The pollution of nitrite is serious in Xinqiao market,while the pollution of nitrate is serious in the Denglong market.
