THE EFFECTS OF HIGH C0_2 AND LOW 0_2 ON ETHYLENE PRODUCTION AND QUALITY OF APPLE, CV. WHITE WINTER PEARMAIN

The fruits of the apple cv(?) White winter Pearmain are stored un-der high CO2 and low O2 condition as soon as they are harvested. This condition makes it possible to depress their ethylene production, delay their respiratory climacteric rise, decrease their rate of softening and extend their after-ripening process. The use of "physiological package" of plastic film makes it possible to obtain the high CO2 and low O2 condition by the respiration of the fruits. Fruit firmness is closely related to the cellulase activity of the fle-sh, Which was evidently inhibited by C02. CO2 shows a great inhibi-tory action of ethylene biosynthesis in the flesh. The effect of CO2 on cellulase activity is probably mediated through its inhibitory effects on ethylene synthesis.
