STUDIES ON NITRATE ACCUMULATION IN VEGETABLE CROPS

Ⅰ.Evaluation of Nitrate and Nitrite in different Vegetables Shen Mingzhu Zhai Baojie Dong Huiru Li Junguo ( Institute of Vegetable Research Academy of Agricultural Sciences of China, Beijing )  
The contents of nitrate and nitrite of 34 important vegetables were studied, among which different parts of 12 vegetables and various cul-tivars of 7 species were detected.In general, the nitrites of fresh vege-tables were in very small amount, e. g. under 1 mg/kg in addition to Chinese Chives which could reach as high as 14.39 mg/kg. The differen-ces in nitrate accumulation occurred among species 。 cultivars and parts of some vegetables were highly significant. Gingers , spinaches and radishes accumulated the higher concentration of nitrates ( f.w. ) being 2650 mg/kg 。 2358 mg/kg and 2127 mg/kg respectively. As for the tomato which contained a small amount of nitrate and its concentration was only 15 mg/kg. The quantity of accumulated nitrate in different parts of vegetables might show as follows:ROOTSTEMLEAF(petioleblade) FRUIT. Nitrate contents in different cultivars of 7 species ranged from 1.4 to 20.8 times, in which the lettuces, spinaches and Chinese cabba-ges revealed obvious differences. These intrinsic characters of vegetable plants provided a possibility for screening the lower levels of nitrate in cultivars. The evaluation of health was proposed on the basis of ADI value 。
