STUDIES ON ETHYLENE PRODUCTION AND RESPIRATION RATE IN RELATION TO OTHER RIPENING CHANGES OF THREE BANANA CULTIVARS

The ethylene production and respiration paterns of 'Dwarf Caven-dish', 'Da Jiao', 'Fen Jiao' bananas during postharvest period were determined. In room temperature, the ethylene production rate (EPR) reached a peak before the climacteric peak. The EPR of 'Dwarf Caven-dish', 'Da Jiao', 'Fen Jiao' rised to a maximum by day 10, 8, 6 after harvest, while the maximum respiration rate appeared on day 12、11、 9 after harvest respectively. During the climacteric there was a sharp rise in pulp conductivity which continued to the senescence stage. When edible, the conductivity of 3 cultivars was 293.33, 316.67, 267.39μυ/cm respectively, The starch decreased whereas sucrose, reducing sugars increased rapidly during the climacteric and postclimacteric stages. Of the 3 cultivars, when the fruit was hard and green, the pulp starch content was Fen JiaoDa JiaoDwarf Cavendish. When soft and yellow, the total sugar content showed the same tendency. The reletionship between ethylene production and respiration, the ripening changes and the differences of these 3 cultivars were discussed.
