Application of Natamycin and Nisin in Food

Preservatives play an important role in food processing and storage.However,in recent years,food safety problems caused by chemical synthetic preservatives have received extensive attention.Therefore,it is urgent to develop natural preservatives being safe,non-toxic and with extensive antibacterial spectrum.In this paper,the structures,properties,preparation and application of natamycin and nisin are described,which have laid a foundation for further research.
