Assessment of selenium chemical species in selenium-yeast

Selenium chemical species in selenium- yeast were determined by extraction withtris- buffer- glycine mixed solution,and compared with dialysis method. The results indicated thatmore than 50%of selenium in the selenium -yeast(total Se is 4000μg/g) was probably in proteinbound molecules as selenomethionine or other large organic species. The inorganic species only ac-counted for 3%,and the free species 0. 01%,It was shown that Se yeast has development prospec-tives and there is a better wav for determination of selenium products.
