Study on Determination of Resistant Starch

Yang Gung Ding Xiaolin (Southern Yangtze University,Wuxi 214036)  
It was found with gel permeation chromatography that the PPA method,in which porcine pancreatic α-amylase was used,was not able to completely digest slowly digestible starch(SDS).It was proved that the PPA method could not exclud the influence of resistant starch granules RS 2,although heating gelatinization procedure was used.The PPA method could not determine resistant starch in sample accurately and took much time.The TSA method with thermo-stable α-amylase used was accurate,because it hydrolyzed SDS almost completely and was able to remove RS 2.
