Sesamin as a Natural Antioxidant

It has been showed from Schaal oven test and Rancimat experiments that sesamin in oil possesses certain antioxidant activity.The free radical scavenging capacity of sesamin was investigated.The results show that sesmin is capable to scavenge the free radicals,DPPH·,·0H,and O~-_2·.The mechanism of the antioxidant activity of sesamin is discussed on the basis of sesamin molecule structure.
