Mechanochemical Effects of High Pressure Homogenization on Corn Starch

Using corn starch as raw materials,the microstructure and physicochemical properties of modified starch were examined by scanning electron microscope( SEM),X-ray diffraction( XRD),confocal laser scanning microscopy( CLSM),rapid visco analyser( RVA),differential scanning calorimetry( DSC),polarizing microscope( PLM). Further,he mechanochemical effects of high pressure homogenization on corn starch were revealed. The results showed that high pressure homogenization had significant mechanochemical effects on the amorphous and crystalline regions of starch granules,and aggregation and agglomeration effects occurred successively in starch granules.
