Angiotensin converting enzyme (ACE) inhibitory activity of sufu

Angiotensin Converting Enzyme(ACE)inhibitory activity was analyzed in 10 types of Chinese sufu,2 types of Japanese sufu and 2 types of self-made sufu.The variations of ACE inhibitory activity were also studied in the process of sufu making by different productive technology.The results indicated that the samples had ACE inhibitory activity with its IC50 value from 2.17 to 3.98mg/ml.The ACE inhibitory activity of red sufu,whose highest value reached 77.8% at 40 d of post fermentation,was stronger than that of white sufu,whose highest value reached 71.6% at 35 d of its post fermentation.
