Development of kelp chili sauce

Preparation of kelp chili sauce was studied with kelp,chili and other materials,the processing technology and operating points were introduced in this article.The optimum ingredient was determined by the orthogonal test while fixed the dosage of water,monosodium glutamate and spice.The result showed that the optimum ingredient was salt 10%,xanthan gum 0.7%,modified starch 1%,garlic 6%,kelp 5%,chili 30%,sugar 2%.
