Extraction process of rennet from fresh stalk of Dregea sinensis Hemsl

The fresh stalk of wild Dregea Sinensis Hemsl from the northwest of Yunnan province was researched. On the basis of single factor test, using rennet activity as evaluation index, the effects of different pretreatments, solid-liquid ratio, extraction time and temperature on enzyme activity of D. sinensis Hemsl fresh stalk was studied. Optimal extraction conditions were determined by three factors and three levels orthogonal experiment.The results showed that the optimal extraction process of rennet from D. sinensis Hemsl was solid-liquid ratio 1∶20(g∶ml), extraction time 40 min, extraction temperature 65 ℃. Under this condition, the rennet activity was 260.984 SU/ml, the rennet extraction rate was 31.35%.
