Effect of Different Age on the Meat Production and Quality of Henan Huai Goat

【OBJECTIVE】The objective of this study is to study effect of different age on the meat production and quality of Henan Huai goat;【METHOD】Henan huai goats are slaughtered at 3 age groups;【RESULTS】The results show as follow :The dressing percentage of Henan Huai goat at 3 age groups is respectively 44.03%(4month),48.09%(8~10 month),48.15%(16~18month).The net meat percentage at 3 age groups is respectively 29.24%(4month),32.21%(8~10month),31.22%(16~18month).The content of crude fat increases significantly with age.There are no difference(P 0.05) at 3 age groups in some physical traits,such as cooked meat ratio,water-lossing,PH.However,the rib eye area,cutting,diameter of muscle fiber increases significantly with age;【CONCLUSION】Meat Production and quality of 8~10 month Henan huai goat are the best at 3 age groups.
