Influence on Nitrite and Nitrate Contents in Vegetables Using Different Treating-methods

Everybody concerned how to decrease the nitrate nitrogen content in vegetable increasingly.This paper summarized the change trends and influencing factors of nitrate and nitrite contents during the processes of storage,boiled water poaching,immersing,machining,and so on,in order to help the scientific diet for persons.
