The Enzymatic Process of Gentiooligosaccharide Production

Zou Hui, Li Xiliu, Luo Mingji (South China University of Technology, Guangzhou 510640)  
Producing gentiooligosaccharide from glucose by a new enzyme was introduced in this article. The best pH for this new enzyme was 5.0, the best temperature was 70℃. If the enzymatic activity was kept at 100%, the temperature should be controlled below 55℃. The IP of the new enzyme was 5.30; its molecular weight was about 85000.
