Response surface methodology & its application in food industry

YANG Wen-xiong,GAO Yan-xiang (College of Food Science & Nutritional Engineering,China Agricultural University,Beijing 100083,China)  
Response Surface Methodology is used to establish fu nctional relationship between responses and factors and to obtain polynomial qua dratic regression equations by reasonable experimental designs.The equations are analyzed to obtain the optimal process parameters and to predict the responses. Several usual design types of response surface methodology are introduced and th eir applications in food industry are summarized in this paper.
