Study on synthesis and properties of soybean sucrose polyester

Sucrose polyester is synthesized with soybean oil fatty acid methyl esters(FAME) and sucrose.Synthesis of soybean sucrose polyester(SPE) were optimized to obtain high yeilds of soybean SPE.Through single and orthogonal tests,the optimum reaction conditions were:soybean oil FAME/sucrose=10 ∶1(mol/mol); reaction temperature is 130℃; reaction time is 6 hour.The product yield reaches 92.9%.
