Research on Extraction and Application Technology of Edible Fungi Laccase

Fungal laccase with excellent biocatalytic oxidation activity, which widely exists in fungal fermentation broth and edible fungi residue, has a bright future in food, papermaking, dyeing and finishing, bio-electrochemistry, bioconversion, sewage treatment and other fields. In this paper, the source, extraction, biochemical characteristics, biological functions and application technology of fungal laccase were reviewed, which provided a reference for the development and utilization of edible fungi laccase.
