Study on the Differences of Antioxidant Activities and Main Active Components of Fresh and Dry Cordyceps militaris

In order to clarify the difference of antioxidant activities of fresh and dry Cordyceps militaris, the DPPH radical-scavenging capacity, cupric-reducing capacity and hydroxyl radical-scavenging activity and of the fresh C. militaris and dry C.militaris were evaluated, and the main active substances such as polysaccharides, adenosine, cordyceps, total phenols, total flavones and superoxide dismutase were analyzed. The results show that the DPPH radical-scavenging capacity, cupric-reducing capacity and hydroxyl radical-scavenging activity of fresh C. militaris are stronger than those of dry C. militaris. The adenosine and cordycepin content in fresh C. militaris are 1.35 mg·g~(-1) and 6.71 mg·g~(-1), respectively, which show no significant difference to that in dry C. militaris. However, the polysaccharide, polyphenol and total flavonoids content in fresh C. militaris are 57.4 mg·g~(-1), 87.56 mg·g~(-1) and 182.24 mg·g~(-1), and the superoxide dismutase active in fresh C. militaris is 50 265.5 U, which were higher than those in dry C. militaris. The trolox equivalent antioxidant capacity analysis shows that the polysaccharide, superoxide dismutase, polyphenol and total flavonoids from fresh C. militaris have stronger antioxidant power than that from dry C. militaris. Therefore, the fresh C. militaris has better development value than dry C. militaris.
