Research Progress on Enzymatic Characteristic and Application of Polyphenol Oxidase

Polyphenol oxidase widely exists in various types of fruit and vegetable plants,activity regulation of which playing an important role in fruit and vegetable processing,preservation and processing of tea primary processing.This paper summarizes the catalytic activity of polyphenol oxidase and its influencing factors,application examples of which were reviewed by classification combined with fruit and vegetable preservation,as well as tea processing.The value space of PPO in biotechnology in future was also pointed out.
