Functional components in peanut and their comprehensive utilization

The status of planting and production of peanut all over the world including China is introduced.The functional components in peanut and their properties are also reviewed.The current research and development of peanut oil,peanut protein,peanut coat and peanut hull are summarized comprehensively.Futhermore,the potential utilization of functional components in peanut such as phosphatide,vitamine E,phytosterol,protein,vitamine K,resveratrol and fiber are discussed in detail,which is relating to the fields of food,medicine,pharmacy,feedstuff and chemical engineering.References can be offered to utilizing the peanut resource rationally and effectively.
