Status of oil detection technology

LU Hao,BI Yanlan,ZHAO Ziwei,YANG Huifang,WANG Menghua(Faculty of Food Science and Engineering,Henan University of Technology,Zhengzhou 450052,China)  
The current status of edible oil detection technology was reviewed.The latest development of quality testing methods,harmful and foreign substances detection research,as well as the identification and adulteration analysis of edible oil were introduced.Modern detection technology of edible oil was quick,convenient,sensitive and accurate.The detective items of the subjective detection were usually objectivized.In addition,many detective items could be determined simultaneously.
