Research advance in synthesis and analysis of sucrose polyesters

As one type of fat substitutes,sucrose polyesters(SPE) are growing important in food industry.The progress of studies on properties,synthesis and analysis methods of SPE were summarized,and some suggestions during SPE development were put forward.
