Studies on the Synthesis of Sucrose Polyesters as New Functional Oil Deming

Sucrose polyesters is a new kind of fat substitutes.Synthesis and purification as well as analysis of sucrose polyesters(SPEs)were studied to obtain high yields of SPEs.Using the sucrose and tatty acid methyl esters(FAME)as the reaction materials,we got the product successfully to apply in food industry.TLC,FTIR,UV,HPLC all were used to analyze the products.The results showed that the degree of esterification is 7 and,the best reaction temperature pressure are 130℃-135℃ and 5 hours respectively.The products owned the same color,smell,viscosity,specific gravity and refractive index with the traditional food oils.
