Effects of Different Antioxidants on Oxidation Resistance of Oils and Fats

The oxidation of fat will seriously endanger the quality of grease and oil-rich food,to ensure the stability of fats is an important issue in food hygiene and safety.Currently we successfully extracted andsynthesized a lot of antioxidants,this article proceeds with several antioxidants affect fat oxidation resistance of the study from fat oxidation mechanism,oxidation factors and anti-oxidation mechanism.
