Determination of Nutritious Compositions and Diosgenin Contents of Purple Yam(Dioscorea batatas Decne.)

[Objective] The research aimed to determine the nutritious compositions and diosgenin contents of purple yam(Dioscorea batatas Decne.). [Method] The crude protein,crude fat,starch,minerals contents and amino acid compositions of purple Dioscorea batatas Decne. grew in Xiakou Town of Jianshan and Jiaojiang of Taizhou of Zhejiang Province were determined by normal determination methods. And the sulfate chromogenic method was applied to determine the content of diosgenin,a bioactive component in purple Dioscorea batatas Decne. [Result] The results showed that the average crude protein contents of purple Dioscorea batatas Decne. grew in Xiakou Town of Jianshan and Jiaojiang of Taizhou of Zhejiang Province was 13.82%,the crude fat was 1.00%,the crude fibre was 25.13%,the starch was 15.93%,and the K,Fe,Zn,Mg,Mn,Ca contents of purple Dioscorea batatas Decne. were abundant. Purple Dioscorea batatas Decne. grew in Xiakou Town of Jianshan and Jiaojiang of Taizhou of Zhengjiang Province contained more than 17 amino acids,among which the glutamate contents were 12.3,10.2 mg/g dry material respectively,and the contents of aspartic,a main delicious flavor amino acids,were 10.9,9.8 mg/g dry material respectively. The content of diosgenin was 2.14%. [Conclusion] The results indicated that purple Dioscorea batatas Decne. is one type of green food with characteristics of high contents of protein and crabohydrate,as well as low content of fat content. And it has certain pharmacological actions. So it has higher value of development and utilization.
