Determination of Sorbic Acid and Evaluation of Uncertainty in Cake

In this paper,the content of sorbic acid in cake was analyzed by high performance liquid chromatography(HPLC).According to "Evaluation and Expression of Uncertainty in Measurement"(JJF 1059.1-2012) and "Guide to Evaluation of Uncertainty in Chemical Analysis"(CNASGL06:2006),a mathematical model for evaluating the uncertainty of determination of sorbic acid in cake by HPLC was established.The evaluation of the uncertainty of the determination method showed that the content of sorbic acid in the sample could be expressed as(0.193 2± 0.057 9)g/kg,k=2.
