Analysis of Fatty Acids in Seed of Eggplant by GC-MS

A simple method had been developed for the analysis of the fatty acids in eggplant by GC-MS.After the extraction using ether as solvent by Soxhlet's apparatus and esterification by potassium hydroxide-methanol,the components and corresponding content of the fatty acid components was determined.13 kinds of fatty acids were identified.The main ingredient is unsaturated fatty acid such as 8,11-Octadecadienoic acid.The method is simple and adapt for the future research of fatty acids of similar species.
