Research Progress on Technology and Equipment for Tea Primary Process in Fujian Province

The primary processing technology and equipment of Fujian tea industry during recent years were reviewed.The production of Fujian oolong tea increased by 171.14%,from 1.6 thousand tons in 2000 to 163 thousand tons in 2011.It accounted for 56% of total output of Fujian tea.Black tea grew rapidly and white tea grew steadily,while the proportion of green tea was declining.The primary processing technology and equipment of Fujian tea have made great progress in the last decades.In tea type aspect,the study of oolong tea primary processing was the majority part,followed by black tea and white tea.In research field aspect,the food quality and safety technology was the most studied direction.It forecasted that,in the future trend of Fujian tea primary processing technology and equipment,the related research about oolong tea will still be the major one,followed by black tea and white tea.Moreover,the quality and safety of tea will remain the hot and key point,and the automation and continuous production of tea may be focused more in the future.
