Study on Controlling the Thermophilic Bacilli in Instant Tea by Nisin

Nisin, a natural antibiotic composed of 34 amino acids, is primarily against a wide range of gram positive bacterium species. The paper investigated the inhibitory effect of Nisin on the heat-resistant spores and TAB,as well as synergistic antimicrobial effect between Nisin and ultra high temperature sterilization(UHT). The results showed that: with the increase of Nisin concentration, there was a sharp decline in quantity of heat-resistant spores and TAB. When the concentration of Nisin reached 100 mg/L, the inhibition rate was up to 100%. After adding Nisin, the heat resistance of heat-resistant spores and TAB was reduced and sterilization temperature reduced from131 ℃ to 121 ℃.There were significant synergistic antimicrobial effects between UHT and Nisin, and adding Nisin could effectively reduce the sterilization temperature of UHT.
